DIRECTIONS

  1. Cut the onion and the tomato into small pieces. Cut the brinjal / egg plant into small cubes and put it in the water in order to avoid oxidation
  2. Dry roast the sesame seeds and peanuts till it gets a nice aroma. Let it cool and then powder it
  3. Heat up the oil in a pan. When the oil is hot, add the cumin seeds. When the cumin seeds start to splutter, add the ginger garlic paste and cook it till it loses its raw flavor. Add the onion and saute itĀ DSC05978
  4. When the onion becomes a golden brown color, add the tomato and a little bit of salt. Cook it the tomato till it becomes soft. Add the red chilli powder, coriander powder, garam masala powder and cook it for a minuteDSC05983
  5. Add the egg plant and required amount of salt and cook it for 5 minutes in a low flameDSC05984
  6. Add the tamarind extract and cook it till the gravy becomes thickĀ DSC05989
  7. Once the gravy becomes thick, add the roasted peanut, sesame seeds powder and mix it wellDSC05991 copy
  8. Cook it for 2-3 minutes and switch off the flame. Garnish this delicious egg plant gravy with coriander leaves and serve it with any kind of biriyani and also with plain rice
