DIRECTIONS

  1.  Wash the Toor dal twice or thrice, and add two cups of water,turmeric powder and pressure cook it for 3 to 4 whistles
  2.  Cut the vegetables into medium size pieces. You can use brinjal, drumstick, white pumpkin, radish, etc., as per your wish
  3. Soak the tamarind in a cup of hot water and squeeze it and get the tamarind extract
  4. Dry roast the coriander seeds, channa dal, fenugreek seeds, and the red chili in a low flame till it gets nice aroma. Add the coconut and switch off the flame

             6. Let it cool and grind it into a slightly coarse paste

            7. Heat up a pan with 2 tablespoons of oil. When the oil is hot, add a pinch of asafoedita, mustard seeds,urad dal and a teaspoon of cumin seeds, 2 no of split red chili one by one

          8. Add the onions ( i used both pearl onion and big onion), curry leaf and               saute it for a minute

                9. Add the vegetables and fry it for a minute. Add a little amount of salt                     and a 1/2 cup of water and let it cook for 10 minutes in a low flame

          10. When the vegetables get tender add the ground masala and the                             tamarind extract and cook the mixture till it loses its raw flavor

             11. Add the precooked toor dal, mix it well. Let it boil for 5 minutes and                    switch off the flame

Garnish the mouth watering Arachuvitta sambar with fresh coriander leaves and serve it with plain rice, idly, and dosa
